Potato Surprise

Here’s a great little potato recipe that everyone will enjoy…

You’ll need these veggie ingredients:

  • 1 pint of mashed potatoes
  • 1 oz. of vegan margarine
  • 4 tomatoes
  • pepper and salt
  • 1 tablespoonful of finely chopped parsley.
  1. Mix the margarine well with the mashed potatoes, season with a little pepper and salt.
  2. Put margarine on 8 patty pans and line them with a thick layer of potato; place 1/2 a tomato in each, with a little of the parsley and a dusting of pepper and salt.
  3. Cover with mashed potatoes, and brown the patties in the oven.

Goji Berry Twist Sensations

Now I’ve heard that perhaps goji berries are the most nutritionally-rich fruit on the planet. These little berries contain 18 kinds of amino acids and contain all 8 essential amino acids (such as isoleucine and tryptophan). The Goji berry contains up to 21 trace minerals (the main ones being zinc, iron, copper, calcium, germanium, selenium, and phosphorus).

And what about these impressive details: Goji berries are the richest source of carotenoids, including beta-carotene (more beta carotene than carrots), of all known foods or plants on earth! They contain 500 times the amount of vitamin C, by weight, than oranges making them second only to camu camu berries as the richest vitamin C source on earth. Goji berries also contain vitamins B1, B2, B6, and vitamin E.

And seeing as I’ve been experimenting with these little bursts of wonder over the past months I’ve come up with a fun twist on the plain berries …. Why not dip them in some vegan organic fair-trade melted dark chocolate! YUMMO!! I did just that myself recently with much success and even got my mother into them. 

So if you don’t realy like the taste of ‘plain’ goji berries or want to get others into them, you can always add your own sensations to them to encourage others to try them. (Now I’m not suggesting to only ever eat goji berries dipped in chocolate, but what I am saying is that it can’t hurt you to do this every now and then for a treat – as we all know by now that pure dark chocolate has it’s own health benefits right).

Dark Choc coated goji berries truly do have a delicate smooth taste that big and little kids will love for much time to come.

Vegan Fruity-Marshmallow-Coconut Salad

Here’s a sweet little recipe that is so quick and easy to prepare (the marshmallows give it a twist on the flavor) …

You’ll need these ingredients: 

  • Small tin of crushed pineapple (drained)
  • 1 tin of mandarin segments (drained)
  • 1 packet of vegan marshmallows
  • Shredded coconut

And here’s all you have to do with them:

  1. Mix all ingredients gently in a bowl.
  2. Refrigerate until chilled.
  3. Serve.

On the UK’s BBC1 program Test the Nation, vegetarians came out on top with an overall IQ of 113. The individual contestant with the highest overall IQ was a vegetarian too. Marie Bidmead, 68, said: “I think it shows that we veggies are good thinkers – we think about what we eat, for a start!” A team of butchers was left trailing in fourth place.
