Carob-Mint-Nut Balls

This is a very quick and gorgeous little recipe I’ve been experimenting with lately …

(Give yourself a burst of flavor and energy with these power packed little treats)

You will need …

  • 1 cup raw cashews – (crushed or ground finely)
  • 6 medjool dates (mashed up)
  • 3 Tbs rice malt syrup
  • 3 Tbs carob powder (or cocoa if desired)
  • 3 drops peppermint oil
  • Desicated coconut to roll in

Method…

  1. Remove pits from fresh dates and mash in a bowl.
  2. Add rice syrup and peppermint oil and mix well.
  3. Next put in the crushed/ground cashews into the mixture and mix in very well.
  4. Now add the carob powder.
  5. Roll into balls then roll in the coconut.
  6. Refrigerate before serving.

*You can use any kind of raw nuts you wish, we’ve found these to be delish with cashews, almonds even macadamias.

Easy Chocolate Truffles this Easter

Here’s a great chocolate truffle and/or spread recipe you can use this Easter. It’s so quick and easy you’ll come back to it time and time again. We’ve just mixed up a batch ourselves and we’ve been getting great reviews on it.

Here’s a tip . . . you can make homemade Vegan Easter Eggs, with this inside as a soft truffle filling … DELISH!!!

Vegan Truffles/Spread Mix

8 oz vegan cream cheese
2 cups powered sugar
2 cups chocolate chips
chocolate chips or almond bark to coat, chopped nuts, shredded coconut, cocoa powder, flavoured liqueur (optional)

1.      Blend vegan cream cheese and powered sugar in a food processor, slowly adding the sugar to the cream cheese.

2.      Melt the chocolate chips on the stove and add the melted chips to the cream cheese mixture, blending it until it’s all mixed in. If you want, you can add a tablespoon or more of flavoured liqueur (hazelnut, peppermint, etc.) to the mixture and blend a little bit longer.

3.      Put the mixture in the refrigerator for about 1½-2 hours. 

4.      Roll the mixture with your hands into little balls.

5.      Roll the balls into the topping of your choice (chopped nuts, shredded coconut, cocoa powder, etc). You can also melt some more chocolate chips or almond bark and dip the truffles in that and refrigerate, so that they have a hard coat over them

6.      Store them in the refrigerator until you are ready to eat them.
